Same reason as SS2 said. Kuririn used Freeza as a measuring stick for Cell when Galu woke up and did the same for Cell as a measuring stick for Boo when Goku was forming the Genki-Dama. It's probably just a way of making it clear for the audience, if anything (as though it weren't obvious enough).
In-universe, I think it has more to do with Piccolo's personal experiences making the feat, even if it were beneath him, more poignant. Regardless of how strong he'd gotten, the memory of how much he struggled against Freeza and the fact he never got another chance to face him would make Trunks oneshotting Freezie Pop a noteworthy feat.
