I mean if Jiren at the end of his fight against UI Sign Goku (1st Use), he was just as strong as in Episode 122, when he was declared by Vegeta to be the highest Ki.

What do they say?

What if Jiren (Episode 122) > Jiren (Peak Episode 110) = UI Sign Goku (Kamehameha vs Kefla) >>>>> UI Sign Goku (1st Use) = Jiren (Vs UI Sign Goku 1st Use)?

At the end of Chapter 110 Jiren very easily parried a punch from UI Sign Goku. It was strong enough for everyone to think at the end of Chapter 116 that Goku had to master the UI Sign well in order to fight Jiren on equal terms.

However that version of Jiren still has to be inferior to Jiren (Episode 122), as Vegeta calls this latest version of Jiren the highest Ki sensed up to that point. Therefore, surely Jiren did a little invisible power-up in between.

Characters have been able to perform "invisible" power-ups in the past and it's no surprise that Jiren would be capable of doing that because the power he had been exhibiting up until that point was just match level. He had yet to be tapping into his true power. It's heavily suggested that Jiren (Episode 122) was stated to be stronger than any other opponent that had been encountered thus far which includes UI Omen Goku (116) and SSJ2 Kefla who are indisputably stronger than Jiren (Episode 110). Jiren also was able to gauge how much power was necessary after seeing Blue Goku and Blue Vegeta powered up and it simply suggests that he needed far more power than he did against Blue Goku back at Episode 109.

The powercreep is absurd here but we are told that Goku was growing significantly stronger during his fight with Caulifa/Kale/Kefla. They started going beyond their limits during their fight against Jiren due to the stakes of the tournament which may have intensified their own emotions. And, this explores one of the fundamental concepts behind Saiyan evolution. The stronger the opponent, the stronger they become. If Jiren's power outstrips any other power encountered thus far, then it helps explain why Goku and Vegeta had begun rapidly improving similar to how Goku and Vegeta didn't rapidly improve against Goku Black just by battling until he fused with Zamasu. It all adds up.

I get what you're saying, I'm just referring to Jiren apparently doing a tremendous power-up at the End of Episode 110, when he very easily parries a punch from UI Sign Goku. It would not be strange if Jiren at that moment is at the level of UI Sign Goku (Kamehameha vs Kefla), since at the end of Episode 116, Whis mentions the importance of Goku mastering the UI Sign state well in the remainder of the Tournament . What follows is that everyone knew that Jiren >>>>> UI Sign Goku (Episode 110).

The only thing we know is that Jiren (Peak Episode 110) must be inferior to Jiren (Episode 122), as Vegeta mentions in Episode 122, at the time Vegeta was fighting Jiren, that is the first time he felt A Ki of that magnitude and it wouldn't make sense for him to make that statement if Jiren had previously used the same power.

Sure Jiren did a small invisible power surge, but his biggest power surge was when he parried UI Sign Goku's punch at the end of Episode 110.

It's possible but I don't think it's suggested. No one references an increase in power and Jiren easily negated the attack because Goku's Ultra Instinct Omen had worn out. It's made clear to everyone at the tournament that the power Jiren displayed against Goku was a farcry from his full power which is stated when Jiren was pushing back Goku's Genkidama.

I say this because Jiren looked very calm as he waited for UI Sign Goku to hit him. Jiren didn't seem at all prepared to take that hit from UI Sign Goku going full speed. Jiren had no way of knowing that Goku would lose his UI Sign state at that moment.
