About to take on the Veilstone gym. Most of my team is around level 30 right now aside from Kirlia. Need to get Houndour and Hippowdon soon before the rest of my team is too far ahead.

Oh nice it's a fighting type gym. Giving Kirlia the exp share for attack EVs. Should also be close to getting Staraptor by the end of this.

Iron Tail for coverage, which can be found on Iron Island and really helps out against ice and rock types as well as softens up opponents by having a chance of lowering their defence. For the last spot, there's several options, mainly more technical and status moves than direct attacks. Roar can be good if you want to cycle through your opponent's team to have Houndoom get a more favourable matchup, Protect could help it avoid attacks against opponents with priority moves or you could go with Double Team in the hopes that it can solo teams through evasion.

Just got to Pastoria City. Found the Dawn Stone and evolved my Kirlia. Already had a heart scale so I taught Gallade Leaf Blade. Now I only need Hippowdon to complete my team.

Is it worth giving Gallade a dark type move given that I already have good dark coverage?

Just beat Wake with ease due to Gallade and Luxray. I find it odd that the leaders have been restricted to 3 Pokemon so far.

Probably not, since Luxray and Houndoom will already fill that role.

Byron was a pretty easy win.

Yeah, Byron is pretty easy regardless of which starter you choose, though the next gym leader (Candice) is by far the easiest in Sinnoh. As long as Staraptor is fast enough to not be hit by a super effective ice beam or you use Houndoom, you can basically solo her whole team with ease.

My whole team is in the low to mid 40s at this point so it should be pretty simple. Still traveling the region to find areas I can surf on. I suspect I'll move on to the next gym today.

Her team ranges from Level 40-44, so yeah, seems pretty easy.
Minor correction to my post: Staraptor wouldn't be able to solo if relying on Close Combat as her team has Froslass on it. Still solo material for Houndoom though.

Beat the 7th gym easily. Was odd that a random trainer in the gym had a pokemon equal to the leader's highest level. Also destroyed Cyrus in their headquarters and training my team before heading to Mt. Coronet

Nice. I was up to that point on Diamond before I ran into a shiny Floatzel and KO'd it lol.
