Granolah notes several times his aim (And Oatmeal I think) helps him aim on people’s vital points. It’s also possible Vegeta let Granolah hit him in order to activate Ultra Ego. The form is fueled by damage, after all.

Vegeta has been training for a while now to get this power up, and he's also prety confident on beating Granolah from the start. I think it's pretty obvious he already knew about the form at the very least.
