Was it out of character for Vegeta to accept his death against Beerus in that way?

To me it seems unlike him to be so nonchalant about being killed. Even if he accepted someone was stronger than him and doesn't mind as much as when he was younger because he'd already accepted Goku being stronger than him in the Buu Saga (btw, I don't see that as contradicting him striving to be stronger than Goku again in Super again like some viewers do), why would he be so accepting of being killed? Would he really give up so easily, especially when Bulma and Trunks will also be killed, when he obviously had more left in the tank (shown from his reaction to Bulma being slapped)?

Also side q, bút why the f was Beerus so weak against Vegeta after slapping Bulma?

I think it could be compared to when he gave up against Freeza. He knew Beerus was simply untouchable, and his childhood memories made it hard to get over that fact. It required him being fully enraged to be able to actually attack him. You could consider the 3 divisions of ki, shouki, yuuki and genki. Shouki is having a stable mind and yuuki is courage. Vegeta was being hampered by both of these and as such wasn't able to force himself to fight.

He was likely that weak the entire time. He was using less than 10% of his fake maximum prior to getting hit by Vegeta, and upped it to 10% after that (in the anime at least).

I mean, it's also out of character for Goku to let Beerus destroy planets without any provocation. So yes.

So he believed all the way through that there was no point to fighting Beerus and had already accepted that he had a high chance of being killed soon? Did he ever have any monologue expressing that?

Never heard about the divisions of ki. Courage I get giving someone a boost compared to times of low courage, but "stable mind" is interesting, considering how much Gohan relied on not having a stable mind. I guess it could be just whatever mind is most suited to the individual as a fighter though (if Shouki just means mind/spirit/mood), which in Gohan's case is to be angry (because when he's not angry his mind is naturally too anxious or intellectual, so a lack of anger weakens him more than it does other characters) and in Vegeta's case it's to be prideful.

Vegeta attempted to attack while in Super Saiyan but wasn't able to move his body.

Episode 7
Time: 17:13
Context: Vegeta is paralyzed when he tries to fight Beerus
Vegeta: “I can’t put any power in my body…”

Prior to Beerus arriving, it was established that he beat Goku in two blows and that Vegeta had no chance. Once Vegeta remembered who he was it solidified that fact in his mind. He knew it was futile to attack Beerus.

Episode 5
Time: 20:00
Context: Kaio warns Vegeta about Beerus
Kaio: “The God of Destruction Beerus-sama will arrive there very soon.”
Vegeta: “The God of Destruction Beerus? I’ve heard his name before.”
Kaio: “Anyway, when he arrives there, you absolutely must not fight him. Do you understand? Don’t do anything! Otherwise Earth itself will be destroyed.”
Vegeta: “Earth itself will be destroyed?”
Kaio: “Goku did something stupid and got easily defeated. With only two blows.”
Vegeta: “What? Kakarot defeated with only two blows?!”

Context: Vegeta remembers Beerus from the past
Vegeta: “The God of Destruction… Beerus… If it’s this guy, I can see him taking down Kakarot in only two hits.”

Yeah that's a good point about Gohan, but if you compare it to Vegeta in this instance it's more or less the same. Gohan was never able to put out his true power unless enraged (as was Vegeta vs Beerus), so maybe rage overrules the 3 divisions of ki.
