I highly recommend Keijo!!!!!!!!
I can assure you that is most definitely not the second most ridiculous anime I've ever watched.

Yuru Camp - Your standard slice of nothing happens life anime. Optional as a time waster, not recommended if wanting a story with any sense of stakes or major consequences.

Keijo - A fanservice parody of both ecchi and battle Shonen. Decent if looking for something that's pure dumb fun, though not if looking for anything else.

As Captain said, it's a slice of life series about camping during the Winter in Japan. Very nice visuals and educational.

Is Hitman Reborn any good?

Not at all. Pretty much the embodiment of most badly handled Shonen tropes, particularly spoiling any future plot event through a time travel arc involving future versions of the main cast.

Vinland saga. Personally haven't watched, but ppl say it's pretty good.

Something that's been released in the last 5 years that isn't attack on titan?

Including adaptions of manga before that time period, Vinland Saga and Gundam: The Origin. Other than that, there's not really anything else worthwhile that fits the bill bar the later parts of JoJo.
