Now that's an interesting question. It definitely is a franchise that has a strong place in my heart that few others hold and one that, prior to the Disney takeover, I had a lot of respect for with its rich world building and lore along with some very interesting characters. I consider some core elements of it (particularly prequel era material) to be good template for various aspects in building a good space fantasy for its focus on world building, politics and grounding the magical aspects. I also have a lot of respect for George Lucas as a creator in having been an underdog who struggled to bring his passion project to screen, tried as best he could to hold onto his vision and even pioneered new technology in CGI to fully realise his imagination. Whilst The Hero's Journey being a major part of Star Wars structure since the OT, I greatly appreciate the extra thematic mile the prequels went to in adding in stronger mythological and religious parallels, some level of Shakespearean tragedy and political critique of both the political take of the US's external politics at the time and the mindset of the deep state that's perpetuated since the mid 20th Century.
I'd definitely cite Pre-Disney Star Wars as one of my favourite franchises, even if hard to cite as one of the best with the EU material that increased its quality being very hit or miss at times and having a messy canon. It is a series that has had several elements surpassed in other sci-fi series since; Mobile Suit Gundam, Legend of the Galactic Heroes and Babylon 5 being some key examples, but it will always be a franchise that I see as a key influence on my ideas as a creator and something I'd cite as a pillar of science fiction.
