I think that Janemba movie comes to the idea of what had happened if Goku fought Super Buu, Goku states he is no match for him and then suggest Fusion, I think it follows that sequence. But Movie 12 Goku is also suggested to have been training whereas Vegeta remained the same.

I don't think there's such a thing as "Initial Super Buu", his base level is never implied to get stronger until the absorptions are a thing. And Gohan had no problem letting him finishing Buu off, only thing he suggest is not being carefree, but never put his power into question.

I didn't realized this was Movie 12 Gogeta, even then I don't think there's anything to evaluate his capabilities considering that the short "fight" he had, was not being close of being one, it was an absolute massacre on his hands towards the monster .

As far as Buu's knowledge is concerned; everything he knows is that someone will appear in 2 days, he doesn't know wheter it'll be stronger than Goku or not, but actually shows deception due to knowing that'll be the one that he has already beaten and then proceeds to call him weak.
